Healthy Chia Seed Pudding

Who doesn’t love a healthy and delicious snack? Today, I am going to show you a super easy way to make a yummy treat from the super food chia seeds. Chia seeds are native to South America and have been used by the Mayan and Aztec in their diets for centuries. It is full of protein, omega-3 fatty acids, antioxidants, fiber, minerals, and helps you feel fuller longer. Did I mention that it is gluten-free? You can find chia seeds at health food stores.

Chia seeds (black or white)-I used white as it resembled tapioca
Almond milk, soy milk, or dairy milk – I used almond
Jar (mason jar are fun)
Fruit juice of your choice- I used mango
Coconut milk
Large spoon-I used a serving size spoon


-With the spoon add 1 part chia seeds into jar (about 2 spoonful)
-Then pour in 3 parts almond milk or milk of your choice
-Stir to blend

-For the fruity version, add about 1/4 of chia seeds to jar
-Then fill with fruit juice of your choice
-Stir to blend

Coconut milk may be used to increase creaminess. You may also use sweetener to taste. For healthier options, use agave nectar and other natural sweeteners. When you get it to your desired taste, cover and refrigerate. Chia seeds have an outer layer that swells up when mixed with liquid. The gelling action will give the pudding consistency. If there is still too much liquid in your pudding, add more chia seeds. Pudding is ready to eat after 2-3 hours.

You may also try these different variations:

-2 serving spoon size of almond butter
-chia seed pudding
-mix to blend and refrigerate until ready to eat


-1 mashed banana (you may also use crushed pineapples or berries)
-add fruit to bottom of jar (smaller size)
-add chia seed pudding on top
-refrigerate until ready to eat
