Avocado Eggrolls Recipe :: Vegan rolls

These eggrolls taste a lot healthier in a good way than the cheescake factory version!  Make them for parties, appetizers, hor d’oeuvres, or snacks… I promise you, they are super delicious!

Cilantro sweet dipping sauce:
1 cup cilantro
½ CUP Agave or any syrup sweetener
½ Tamarind pulp or 1-2 tspn concentrate
1 pinch saffron
1tlb spoon organic sugar
1 tspn ground cumin
½ spn pepper
3-4 tspn white vinegar
1 tspn balsamic vinegar
2 tablespoon Olive oil
Optional: cashews and garlic
Avocado Filling (14 rolls):
4-5 small avocados
some red onions (whatever amount you prefer)
sundried tomatoes (whatever amount you prefer)
4-5 stem of cilantros
1-2 tspn sea salt
Spring roll pastries

  1. Are these avocados not ripe yet? how do you keep them from getting mushy and gross when frying?

  2. These are so good!! I actually baked mine. I put a metal cooling rack on top of my baking sheet so that the air can circulate around them. They bake up nice and crispy w/o all the grease from frying! All my friends love this recipe and I am requested to make it all the time.
